Recipe for Maple Whoopie Pies
The humble Whoopie Pie is a mighty treat.
Whoopie Pies enjoyed some popularity in England back in the 2010’s but I always feel like they are due a resurgence.
An almost cross between a sandwich cookie and a cake these soft treats were said to make the Amish men who found them in their lunchbox shout “Whoopie!”
If you wanted to have a go at making some they are a great treat for Valentines, the weekend or even Maple Syrup Day (17th of December!)
Whoopie Pie Ingredients
115g butter
200g light brown sugar
1 tbsp of maple syrup, plus more for buttercream
1 large egg
300g white plain flour
2 1/2 tsps baking powder
Pinch of salt
100g vanilla fudge, chopped up small (will be very hot once cooked and will melt)
50g porridge oats
4 tablespoons of buttermilk (I used soya milk or you could use non fat milk)
225g hard butter
100g icing sugar (try golden!)
Method
First Preheat oven to 190 degrees/170 fan/gas mark 5 and line a tray
Next put butter, sugar and maple syrup into a blender and whisk until light and fluffy.
Beat in the egg, pre whisking lightly is a great help
Sift in flour, baking powder and salt
Add fudge, oats and milk. Stir
Spoon out onto the tray, whatever size you spoon out will approx double in size.
Bake for about 10 mins until firm
Blend together hard butter, icing sugar and maple syrup to taste
Once pie halves are cooked and cooled sandwich two biscuits together with buttercream

Once you’ve indulged in Whoopie Pies and mastered the maple recipe there is a whole world of alternatives you could create.
How about vanilla and strawberry jam? Or chocolate?
