Sweet Summer Treats

Ice cream cake pops are the perfect treat to make as we head into summer months but it hasn’t warmed up too much!

We all scream for ice cream and ice cream cone cake pops scream summer.

Cake pops, otherwise known as cake truffles, are crumbled cake mixed with buttercream and reformed into shapes. Normally then covered in chocolate or icing. They are not cakes baked into shapes but these cake lollies do exist as doppelgangers of the good stuff.

How to make ice cream cake pops

These treats are super simple, super summery and super delicious!

All you need to make them is…

• flat bottomed ice-cream cones
• pre-cooked cake
• buttercream (I used chocolate with grated milk chocolate but Neapolitan would be super cute)
• white chocolate
• sprinkles!

Ice cream cake pops step by step

1. First you need to crumble the pre baked cake into crumbs
2. Then mix this with the buttercream
3. When this is fully combined press into the cone carefully!
4. Then shape the top into a round. 
5. Next put on the first layer of white chocolate
6. Leave this to set
7. Then apply another coat and texture to look like ice cream
8. Add some sprinkles before the chocolate fully sets!
9. Enjoy!

Variation ideas for ice cream cake pops

Neapolitan ice cream

This trio of flavours is easy to recreate with three different buttercreams. Be sure to keep the mixes separate until you press into the cones so the strawberry, chocolate and vanilla can all be tasted. Use food colourant on the white chocolate to top it with vanilla and strawberry along with milk chocolate.

Mint choc chip

A chocolate chip cake or plain sponge mixed with mint buttercream topped in mint chocolate would make a refreshing treat.

Ice cream flavour inspiration

In fact any favourite flavour of ice cream lends itself to this. Just decorate the top accordingly to keep the theme alive
