How to make a Biscoff Sandcastle Cake
Sandcastle cakes are a great way to make a shaped summer cake.
Nothing says summer like the seaside. Nothing says seaside like a sandcastle.
Using a moulded tin rather than carving this leaves all the decoration time for fun themed decorations.

Here are photos of a sandcastle cake we created for a birthday celebration.
We used a sandcastle silicone mould and covered in golden icing buttercream and Biscoff crumbs to represent the sand. The shells are created from white fondant and yellow marzipan.
Biscoff biscuits and biscuit spread a great cake addition no matter the season for a classic, delicious but not overwhelming flavour.
The sandcastle shape can be a little tricky but our top tips for using the sandcastle silicone mould should help you get the best results. Ours was from Lakeland but they are not currently available.
Top tips
1. Read any instructions on the packaging on your mould for example if it has quantities, follow them- you want the mould to be full of cake batter. You can always flatten the bottom with a knife (whilst its the top after baking) before flipping.
2. Use easy release spray to keep all the details
3. Use a fairly ‘firm’ cake mixture, a super fluffy cake won’t withstand being pulled from the mould.
Once the cake is removed and placed on the board, you can cover the whole cake as you wish. Consider the fact that there is no filling inside the cake when you decorate. We covered this one in brown sugar buttercream and Biscoff crumbs to represent sand.
To finish the decoration a pipped buttercream sea around the edges also sweetens up a plain cake. Apply fondant and marzipan shapes with a little golden buttercream.
Instead of covering it in buttercream we could of just had piped details but the recipient was keen on having an iced cake.
