How to make a white chocolate and strawberry cake

A delicious summer cake idea

Cake is the perfect treat all year round but nothing is nicer than sitting outside in good old British weather with a cup of tea and a slice of light, fresh summer cake. Now we are in June hopefully the weather will be getting warmer as we head into UK strawberry season so what better flavour to celebrate, or celebrate with, then strawberry and it’s best friend white chocolate!

Take inspiration from our summer daisy design for a pretty in pink cake this strawberry season!

We created this daisy flower cake for a client’s summer celebration. A round vanilla sponge cake with pink strawberry buttercream, chocolate daisies and icing decorations too.

Decorative touches

To achieve the textured look apply buttercream with an offset palette knife. The textured look contrasts nicely with the smooth flowers.

We created chocolate flowers by shaping molten white chocolate with a spoon. First, melt white chocolate, then take a spoonful and blob it onto a silicone sheet. Next take the back of a spoon and spread out from the middle. Leave these to cool and then carefully peel from the silicone sheet. Apply to cake with a gentle push but be careful as they can snap.

We created icing daises using two different-sized push cutters and fondant. Colour the middles with a brush and liquid food colour. Place all over the cake filling any gaps.

We finished the cake with a coordinating complimentary ribbon for a traditional look.
